Up here in northern Europe we actually have a couple of bright and sunny months (even though we spend most of the year in total darkness). And when that first sun comes out everything stops. We start behaving like statues, standing in the street corners, gazing at the sun. And we start to eat lunch and dinner outside even though it’s actually freezing cold. And we wear sunglasses everywhere. And we buy ice-cream, smoothies and shakes and pretend that it’s summer, even though it’s only April. As you might understand that first sun has just appeared. And we love it! So we rushed into the kitchen to make us a summer shake.
When we lived in Italy we fell in love with all their different cold coffee drinks, unfortunately they were all jammed with sugar and cream. Now we have tried to recreate that summer coffee feeling. We replaced the sugar and cream with coconut milk, rice milk and a banana, which makes the shake rich, creamy and sweet. We gave it some extra taste with cardamom and hazelnuts. Enjoy it in the sun!
Coconut Coffee Shake
Makes 2 large glasses or 4 small
3/4 cup coconut milk
3/4 cup rice milk
1 large banana
2 tbsp coconut flakes
1/2 cup hazelnuts or 2 tbsp nut butter
1 tsp cardamom
1 tsp vanilla powder
8 ice cubes
1 – 2 shots espresso (depending on how strong you like it) or 2-3 tsp instant coffee
Mix all ingredients, except the espresso, in a blender for a couple of minutes (if you use instant coffee you should blend it as well). Pour the shake into the glasses. Pour the wished amount of espresso into each glass, stir a couple of times with a spoon. Serve immediately.
