Lemon Potato & Edamame Salad

In the end of May we are going to Denmark to have a welcome-to-the-world picnic for Elsa. We have invited friends and family to a lovely park called Dyrehavsbakken (The Deer Park Hill), a large forest park north of Copenhagen, and yes, deers do run around freely there! To keep it simple we have asked everyone to bring their own favorite dish. We might bring our Spinach Muffins together with this cold Lemon Potato & Edamame Salad. It literally sings spring, has a fresh lemon taste and is really easy to make.

Potatoes have been blacklisted in the health/food world the last couple of years because of all the low-carb-diets. Such a shame! Potatoes are actually good for your health because they contain fiber, vitamins B6 and C, lots of potassium, plus phytochemicals that help keep your blood pressure normal. So, a potato a day might actually keep the doctor away…

Lemon Potato & Edamame Salad
Serves 4 – 6

1 kg potatoes
500 g edamame beans (fresh shelled soy beans), we use frozen

Marinade
4 tbsp olive oil
1/2 organic lemon (juice and peel)
2 tbsp hemp seeds (or sesame seeds)
salt & pepper

Boil the potatoes and set aside. Boil some water and pour it over the frozen edamame beans, let them soak for a couple of minutes and then remove the shell. Mix the marinade and cut the potatoes in medium size pieces. Mix potatoes, edamame beans and the marinade in a bowl and serve on a big plate, or bring it in a picnic-box!

We finish this post with a picture of Elsa and her new best friend. An organic pacifier. She has been down with a respiratory virus infection during these last two weeks – coughing and crying all the time – and we have been worried big time. Therefore we gave her the pacifier to help her calm down, and she loved it! Now she feels much better, but she doesn’t let her new best friend out of sight.
