Spelt & Muesli Scones

Spelt Scones
We tried a healthier version of scones for our country house brunch. The result was a success! Scones are great because they are quick to make and they taste good together with just about everything. We had some sugar free marmalade, plain butter and cheese. Soon we will try to make our own sugar free marmalade, we’ll replace the sugar with some kind of fruit juice. Right now were looking for a good recipe for this. If anyone has any tips, just write us or give us a comment.

Spelt & Muesli Scones
Makes 4 large scones

2 1/2 cup spelt flour
1 cup muesli
3 tsp baking powder
1/2 tsp salt
100 g butter (in pieces)
1 cup swedish
filmjölk (sour milk or butter milk)

Preheat the oven to 250°C. Line a baking sheet with parchment paper. Whisk the spelt with the muesli, baking powder and salt in a bowl. Stir in the butter and the “filmjölk” until it all comes together. Form 4 buns (about 10-12 cm wide) with your hands and put them on the baking sheet. Bake the scones for 15 minutes or until golden. Serve with butter, cheese and sugar free marmalade.

    One thing-i am from ireland and I am never sure of cups sizes-please can you give quantities in grams for this recipe?

    I made these-but i made a lot more than four scones-11 lovely buns!!!we love them in my house: they become so FULL on baking-delicious on their own-certainly to be repeated-and we are thinking to vary our museli choice to see what fits best!!

    • Hi Annika, Those scones are still in the app. If you are having trouble finding the recipe, try clicking on the search icon (the magnifying glass) and then type scones. Also, make sure you don't have the gluten-free filter switched on in the settings. /David

    I am trying to not eat so much animal fat (I have high cholesterol which seems to go down to manageable if I stay away from cheese (which I LOVE) and butter. I am wondering if you have tried these with solid coconut oil.
