Birthday Blueberries

Today is my birthday. I turn 29. And since Luise and Elsa still are in Denmark I didn’t really feel like baking myself a cake. Instead I bought a big big box of fresh Swedish blueberries and made myself a blueberry coconut super smoothie. It’s quick, easy, delicious and also super nutritious (seriously, look at the ingredient list). That’s a pretty good way to start your birthday, right?

Blueberry Coconut Super Smoothie
2 glasses

1 cup fresh blueberries
1/2 cup coconut water
1 frozen banana
a big chunk fresh ginger, minced
juice from 1 lime
2 tbsp coconut flakes
a handful of walnuts

Throw all the ingredients in the blender. Blend it for half a minute. Taste it and add more ginger if needed. I used almost 2 inches, but I like it quite strong.

  • Ooops I was on vacay so missed your birthday:( Happy belated! Hope you still enjoyed your special day even if you were on your own and your delicious looking smoothie! Wouldn't it be great if you started a new trend--healthy birthday smoothies instead of sugary birthday cakes?? Imagine the possibilities!
    • Hi Julie, I can easily imagine the birthday smoothie trend! You could make them in lots of different colors and decorate them in a thousand different festive ways. Although it is kind of difficult putting birthday candles on a smoothie ... /David

  • Today you are you that is truer than true. There is no one alive who is you-er than you. Shout out loud "I am glad to be what I am!" "Thanks goodness I am not a clam, or a ham, or a dusty old jar of goosberry jam. I am what I am what a great thing to be if I say to myself HAPPY EVERYDAY TO ME!" - Dr. Suess. Happy Birthday. Blueberries should be honored that you picked them to celebrate your special day.
